Ushering the year of the DRAGON starts early for me @ Palace of the Golden Horses

There is a saying that says beauty lies in the eyes of the beholder, but if you ask me, I, sometimes would say beauty lies in the hands of the creator.

In this case, I am referring to a 9-course CNY menu prepared by a so-called celebrity chef in a Chinese Restaurant, but they have recently change their name to Cantonese Fusion Restaurant, and it is non-other than Kim Ma which is situated inside Palace of the Golden Horses.

Before the end of 2011, majority Chinese restaurants / Hotels, have actually churn-out their set menu for Chinese New Year which falls quite early (23 Jan 2012 to be exact). And with my trustee handy-mobile-cam, I had the chance to actually loh-sang on 30 Dec 2011.

What an experience I had, because it isn't really a regular presentation of a normal course dinner. Living up to the celebrity chef title (Chef Roy Wong), dishes and dishes appearing before me just make my eyes gleam. No wonder they have change their name to Cantonese Fusion.

Allow me to speed you through the 2-hour dinner.

Prosperity Yee Sang with Fresh Norwegian Salmon

Kim Ma’s Appetizer Combinations

Double-Boiled Minced Chicken Broth with Fish Maw and Shark’s Fin 


(喜 事 成 双) 味 鸡
Palace’s Special Roasted Chicken and Baked Chicken Chop with Black Sesame Sauce 



(皇 袍 加 身)
Sautéed Tiger Prawns and Fish Fillet with Superior Fish Broth and Vermicelli

Stir-Fried Hong Kong Kai Lan with Crispy Vegetarian Dumplings

Kim Ma Cantonese Fusion Restaurant is an exotic oriental restaurant in town that serves contemporary Cantonese cuisine that will definitely tempt your taste buds. Kim Ma which is named after the noble character of Golden Horse has a subtle and relaxing dining ambience.  The interior of the restaurant is designed in typical orient ornate with minimal and tasteful trappings. The restaurant uses fresh vegetable from the organic farm located at the hotel, planted using natural compass and no harmful pesticide.
